My Primavera for One

1 Table spoon Olive Oil
1 Chicken breast cut into cubes or
4 to 6 Medium to large frozen shrimp
McCormick Grill Mates® Roasted Garlic and Herb seasoning blend
½ cup of Pasta of your choice cooked according to package

1.  Add butter and oil to pan.  Heat pan a bit.
2.  If cooking chicken, add the chicken with the seasoning blend.  Cooking chicken until white on outside, then add vegetables.
If cooking shrimp, add the vegetables with the seasoning blend.  Then once the vegetables are mostly thawed add shrimp.  Cook until shrimp is thawed and heated.
3.  Add a bit of water to create a sauce.  Stir contents of pan a bit and once everything is cooked pour over pasta.

My Comments
This is what I eat for lunch most days, if I’m home.  It’s quick and easy.  Of course it is also good.  The recipe above is for one, but you can add more vegetables and pasta and chicken to make it for more.  I just make it for myself since I’m the only one at home that likes it.

Comments by Audra
Well here is my quick Mac and cheese.  You may need to add more milk.  I normally just pour some milk in with the cheese and don’t measure.  If you want to you can add more cheeses or use cheese blends.  This is roughly what I make when I make it.  I will update with my baked version.  I can’t use the seasoning blend since my dad and brother doesn’t really like it that way.
My next recipe, which will be updated soon, is my own primavera.

Hot and Spicy Stir Fry

Hot and Spicy Stir Fry
For one or two, Can make it for three
1-2 Chicken boneless-skinless chicken breast, chopped
1-2 Tablespoons Teriyaki sauce, I prefer Kikkoman®’s, but not the thin one.
2 tsp give or take, Garlic Powder
2 tsp give or take, Onion Powder
½ bag of Frozen veggies, what ever you want, I personally like GV® stir fry mixes
Jalapeno peppers, can or fresh, your choice
1 Tablespoon of Oil or Butter
Cooked Rice
  1. Place oil or butter in skillet.  Heat skillet until hot.  Then add chicken, garlic powder, and onion powder.  Cook until chicken is white or light brown.
  2. Then add frozen veggies.  Cook until veggies are thawed, but not cooked all the way.
  3. Add the Teriyaki sauce and jalapenos.  Cook until veggies are completely cooked.
  4. Pour over the cooked rice or set on the side.
You can replace the chicken with shrimp if you wish.  That was the original way I had it a Chinese Buffet.  The garlic and onion powders are to your taste.  I don’t really measure when I make it.  I just add it.  I don’t think you can enough garlic.  You can also make it and remove the peppers to make it milder, this is what I have to make for my dad and brother.
